Spinach, Walnut, and Fruit Salad with Chicken
Ingredients:
- 12 oz chicken breast
- Non-stick cooking spray
- 8 cups fresh spinach
- 1 orange
- 1/3 cup dried cranberries
- 1/4 cup chopped walnuts
- 1/4 cup crumbled feta cheese
- 4 dried apricot halves
- 8 tablespoons balsamic vinaigrette
Directions:
- Heat a medium non-stick skillet over medium heat. Spray with cooking spray, heat again for a few seconds, and then add the chicken breast. Heat chicken until cooked thoroughly (no pink). Remove the skillet from heat. Slice chicken into strips.
- In a large salad bowl, add spinach, cranberries, feta, and walnuts.
- Peel orange. Cut orange into inch cubes. Add to ingredients in salad bowl.
- Cut dried apricots into small pieces, similar to cranberries in size.
- Lightly toss all ingredients in the salad bowl.
- Place sliced chicken (warm or chilled) over the top.
- Serve immediately and enjoy!
